Here are some reasons it wouldn't work in real life. Glass bottles are valuable and expensive. Real people carried oil in leather pouches or clay pots. The "oil" in medieval times is tallow, olive oil, or possibly whale oil. It's not gasoline. It won't explode into an immediate raging conflagration. If you want to fry a bad guy, cast a Fireball.
